THE SWAP ★ ★★★★

Ritual Whiskey Alternative — Oak and caramel hold up against a full measure of lemon, which is the entire test of a sour. About $30 a bottle.

No bottle? No problem. Use 2 oz of strong chilled black tea with a pinch of smoked salt. Tea tannin does the oak impression and the lemon never knows the difference.

The sour is the oldest architecture in the cocktail book: spirit, citrus, sweet, lengthened with ice and crowned with foam. It survives every era because it is balanced on a knife edge, and the zero proof version holds that edge beautifully, because lemon and oak never needed alcohol to argue with each other.

Why this version works

A whiskey alternative earns its place in a sour because lemon is aggressive. It flattens delicate drinks, and oak and caramel push back. The aquafaba is not a garnish gimmick; the foam softens the first sip, carries the bitters, and makes the drink feel finished, like the head on a good beer. Learn the dry shake here and every sour, flip and fizz in your future gets easier.

The method

  1. Add the whiskey alternative, lemon juice, syrup and aquafaba to a shaker with no ice.
  2. Dry shake hard for fifteen seconds. You are whipping the foam into existence.
  3. Now add ice and shake again for ten seconds to chill and dilute.
  4. Strain over fresh ice in a rocks glass, or straight up into a coupe if you prefer it lean and elegant.
  5. Dash the bitters across the foam, drop in the cherry, add the lemon twist, and serve it while the cap is still standing proud.

Make it yours

Amaretto detour: swap half an ounce of the whiskey alternative for an amaretto alternative and the sour goes almond rich and dessert adjacent.

Gold rush: swap the simple syrup for honey syrup and you have the beloved modern classic, zero proof and all.

Spiced sour: use the spiced syrup from the From Scratch pillar and the lemon turns autumnal in one move.

Mistakes to avoid

Skipping the dry shake. Foam made only with ice is thin and dies young. The dry shake is where the cap is born.

Bottled lemon juice. A sour is three flavours in a knife fight; a dull lemon loses. Fresh juice, every time.

Syrup by guesswork. Sours punish sloppy measuring faster than any other family. Use the jigger until the ratio lives in your hands.

Serving and batching

Serve it as soon as it is strained, foam waits for no one. For a round of four, dry shake the batch in your largest shaker, then shake with ice in two rounds so every glass gets a proper chill and a proper cap.

Questions, Answered

What is aquafaba and will the drink taste like beans?

Aquafaba is the liquid from a can of chickpeas, and no, it will not. Whipped by shaking, it foams exactly like egg white and its flavour disappears completely behind lemon and whiskey. It is the standard egg free foam for sours.

What is a dry shake?

Shaking the drink first without ice, which whips the aquafaba into foam, then again with ice to chill it. Two shakes, one extra minute, and the cap on the drink looks professional.

Too tart or too sweet, how do I tune it?

The sour ratio is a dial, not a law. Start at two, three quarters, half. If your lemons run sharp, pull the juice to two thirds of an ounce; if the drink tastes flat, the lemon goes up, never the syrup down alone.

Can I use egg white instead?

Of course, half an ounce of fresh egg white works the same way and some people prefer its texture. The method does not change at all.

Zero proof means these drinks are made without alcohol. Some zero proof bottles and bitters carry trace amounts (under 0.5% ABV), about what you would find in a ripe banana or a glass of orange juice. If you are pregnant or avoiding alcohol entirely for health reasons, check your bottle's label and go with what you are comfortable with.
