THE SWAP ★ ★★★★

A dark cane rum alternative — Lyre's Dark Cane style bottles bring the molasses depth that makes the float read as a storm cloud, about $37.50. A spiced rum alternative works nearly as well.

No bottle? No problem. Float one ounce of strong chilled black tea sweetened with a teaspoon of demerara syrup. The colour and tannin sell the storm, and the ginger does the rest.

Every other drink on this site arrives mixed. This one arrives as weather: bright ginger gold below, a dark front of rum alternative sitting on top, and the whole glass waiting for you to stir the storm in yourself. It is the most dramatic three ingredient drink in the book, and it gives up nothing at zero proof.

Why this version works

The dark and stormy is a mule with a theatre degree. Underneath, it is the same ginger fire and lime snap, and ginger beer at full heat reads like spirit bite all on its own. The float works because the dark cane alternative carries molasses colour and weight of flavour, and because a slow pour over a spoon respects the density line between the layers. What the rum would have added in proof, it replaces in colour and depth, and the glass does the rest.

The method

  1. Fill a highball glass with ice to the top.
  2. Pour in the ginger beer and the lime juice. This is the calm sea.
  3. Hold a bar spoon just above the surface, bowl side up, and pour the rum alternative slowly over it in a thin ribbon. Watch the dark layer form.
  4. Squeeze the lime wedge over the top and drop it in.
  5. Serve it layered, with a straw or a stir stick, and let the drinker make the weather.

Make it yours

Hurricane season: add half an ounce of passionfruit syrup to the ginger beer layer. The storm turns tropical and the colour goes sunset under the clouds.

Apple orchard storm: swap the ginger beer for sparkling apple cider plus half a teaspoon of grated ginger in the autumn. Different front, same drama.

Extra dark: float a quarter ounce of strong lapsang souchong tea on top of the rum layer for a smoky edge to the clouds.

Mistakes to avoid

A fast float pour. Dump the rum in and you have a murky mule. The ribbon pour over the spoon is the whole drink.

Warm ginger beer. Warm soda mixes instead of layering and the fizz dies young. Everything cold, always.

Stirring it in the kitchen. The layer is the presentation. Stir at the table or do not serve it at all.

Serving and batching

Serve in the tallest, clearest glass you own so the layer shows. This one refuses to batch, because the float is per glass, but the thirty seconds it takes is the show, and a round of these built at the table turns a Tuesday into an occasion.

The Recipe Card

Questions, Answered

How does the float actually work?

Density and gentleness. The sugary ginger beer is heavier than the rum alternative, so if you pour the rum slowly over the back of a spoon onto the surface, it sits on top in a dark layer instead of mixing in.

Should I stir it before drinking?

That is the drink's little drama: it arrives as two layers and you stir it into one stormy whole at the table. Nobody has ever been sad they watched it happen.

Is there a trademark thing with this drink's name?

There is: the name is trademarked by a Bermuda rum house and the official version specifies their rum. At zero proof, nobody's trademark is harmed, and home bartenders have always made their own weather.

Mine mixed instantly. What went wrong?

Usually the pour was too fast or the ginger beer was warm and thin. Chill everything, pour the rum over a spoon in a slow ribbon, and the layer holds.

Zero proof means these drinks are made without alcohol. Some zero proof bottles and bitters carry trace amounts (under 0.5% ABV), about what you would find in a ripe banana or a glass of orange juice. If you are pregnant or avoiding alcohol entirely for health reasons, check your bottle's label and go with what you are comfortable with.
